1972 – Born in Saitama, Japan as oldest son of a family running a traditional Kaiseki restaurant called Katsura-Saryo.
1995 – Came over to London and worked in several Japanese restaurants in central London to gain experience
Japanese cuisine from outside Japan
2000 –Returned to Japan to work as a head chef in his parents’ kaiseki restaurant
2003 – Move to Tokyo to expand & develop his own style of new Japanese food through working in sushi restaurant in Tokyo
as a head chef
2005 – Returned again to London to work as opening member of Nobu Berkley street where he met Tomonari Chiba,
founder of Dinings restaurant.
2008 – Left Nobu and join Dinings restaurant as business partner and a head chef
2010 ~ present - Awarded no.1 Japanese restaurant in a zagat restaurant guide in their top 5 London
Japanese restaurants, together
with number 1 in their top 5 London small plates restaurant 2010, 2011 and 2012.
Also running number of cookery classes and cooking demonstration with his partner Nick Taylor-Guy for several different
occasions such as Peugeot cuisine d’amour theatre at taste of London and featuring his own style of new fusion Japanese dishes at
the open championship at St.George etc.
